Ingredients:

  • 7 oz greek yogurt
  • 1/2 C flour
  • 1 tsp baking powder
  • 3/4 C butter – softened to room temperature
  • 14 oz feta cheese – crumbled
  • 2 eggs
  • 7 oz roicotta cheese
  • 1/2 C milk
  • pinch of nutmeg
  • pinch of pepper

Directions:

  1. Preheat oven to 350 degrees
  2. Grease an 11″ x 7″ x 2″ baking dish with olive oil – set aside
  3. In a large bowl, mix together flour and baking powder
  4. Whisk in the milk
  5. Add yogurt, eggs and butter – stir well – the mixture will be thick – don’t worry, if you keep stirring everything will combine
  6. Add ricotta cheese
  7. Using a large spoon, gently fold in feta cheese – don’t break the feta to very small bits
  8. Add nutmeg and pepper
  9. Pour the mixture into prepared baking dish
  10. Bake in the middle rack for 40 – 45 minutes, until golden brown – the pie is ready when inserted knife comes out clean
  11. Remove from the oven and let it cool before serving
