Ingredients:

  • 10 carrots
  • 1 small onion – chopped
  • 1 clove garlic – minced
  • 1 stick (1/4 C) + 1 Tbsp butter, softened to room temperature 
  • 1 egg – beaten
  • salt & pepper – to taste
  • 2 C Ritz Brand crackers – crushed
  • 2 C shredded cheddar cheese – divided 

Directions:

  1. Preheat oven to 375 degrees
  2. Grease an 9″ square baking dish with non-stick cooking spray
  3. Clean carrots and cut into large pieces  
  4. Cook carrots in boiling water until soft  
  5. Drain well and mash
  6. Saute onions & garlic over med-high heat in 1 Tbsp butter until soft
  7. In large bowl, combine carrots, onion, 1/2 C (1 stick) butter, egg, Ritz crackers and 1 C cheese – mix well
  8. Place carrot mixture into baking dish and top with remaining 1 cup cheese
  9. Bake uncovered for 30 minutes until bubbly and edges are slightly browned
