Ingredients:

  • 1-1/2 lbs red potatoes
  • 1/2 tsp italian seasoning
  • 1 tsp garlic salt
  • 3 Tbsp butter – cold – sliced into 10 pieces
  • 1/2 C pizza sauce
  • 2 C mozzarella or italian 6 blend cheese – shredded

Optional: (*see Notes below)

  • mini pepperoni or pepperoni slices cut into quarters
  • cooked (not raw) italian sausage crumbles
  • ham – diced
  • pineapple chunks – diced 
  • sliced mushrooms – cut into small pieces
  • sliced black olives
  • minced onion

Directions:

  1. Dice potatoes into 1/2″ – 3/4″ pieces
  2. Place them into a shallow microwaveable bowl or plate – I use a glass 9″ pie plate
  3. Place sliced butter pieces randomly on top of potatoes 
  4. Sprinkle italian seasoning and garlic salt on top
  5. Cover plate with microwave-safe plastic wrap (I use Press-n-Seal) and poke a couple of holes in it
  6. Place in the microwave and cook on high for 5 minutes
  7. Remove potatoes from the microwave and carefully remove the plastic wrap – be careful – there will be hot steam!
  8. Stir the potatoes well
  9. If using, add in meat ingredients (not vegetables) and stir well
  10. Re-cover and place in microwave and cook on high for 3 minutes
  11. Test the potatoes to ensure they are fork tender – if not, pop them back into the microwave for an additional 1 – 2 minutes
  12. Stir in pizza sauce (and if using, any vegetable ingredients) with the cooked potatoes
  13. Top with shredded cheese
  14. Put the plate (uncovered) into the microwave and cook on high for about 2 – 3 minutes – or until cheese is completely melted

Notes:

  1. If using any optional ingredients, make sure that they are small pieces, as they will only be in the microwave for a short amount of time
