Ingredients:

  • 2 C chicken broth
  • 1 C long-grain white rice
  • 2 Tbsp butter
  • 2 medium zucchini – grated (about 2 C)
  • 1 C shredded cheddar cheese
  • salt and pepper – to taste

Directions:

  1. In a medium saucepan, add the chicken broth and bring to a boil
  2. Stir in the rice, cover and reduce heat to low and cook for about 20 minutes or until liquid is absorbed
  3. Remove from heat
  4. Add the butter, zucchini and cheese
  5. Stir and let stand for about 5 minutes
  6. Add salt and pepper – to taste
