Ingredients:

  • 1 lb large shrimp – peeled and deveined
  • 1 Tbsp chili powder
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp olive oil – divided
  • 1 red bell pepper – sliced
  • 1 green bell pepper – sliced
  • 1 yellow bell pepper – sliced
  • 1 medium sized onion – sliced
  • flour or corn tortillas

*optional toppings: avocado, chopped cilantro, sour cream, salsa

Directions:

  1. In a large bowl mix together shrimp, chili powder, paprika, onion powder, cumin, garlic powder salt and pepper – set aside
  2. In a medium sized skillet over medium high heat, add 1 Tbsp olive oil, bell peppers and onion
  3. Saute until tender, about 5 – 7 minute.
  4. Slide to the side of the skillet
  5. Add 1 Tbsp olive oil and shrimp
  6. Cook for 2 – 3 minutes or until no longer pink
  7. Serve in tortillas with optional toppings
