Ingredients:

  • 2 lbs potatoes (5 – 6 medium) – peeled and cut into 3/4″ chunks
  • 1 C mayonnaise – I always use Best Foods Brand
  • 2 Tbsp vinegar
  • 1-1/2 tsp salt
  • 1 tsp sugar
  • 1/4 tsp ground black pepper
  • 1/4 C celery – thinly sliced 
  • 1/4 C onion – finely chopped 
  • 2 eggs – hard boiled and chopped
  • 1 can (5 oz) black olives – sliced
  • paprika

Directions:

  1.  In 4 qt sauce pot, cover potatoes with water
  2. Bring to a boil over medium-high heat
  3. Reduce heat to low and simmer until potatoes are tender – about 10 minutes
  4. Drain and cool slightly
  5. In a large bowl, combine mayonnaise, vinegar, salt, sugar and pepper
  6. Add potatoes, celery, onion, eggs and black olives – toss gently
  7. Sprinkle a little paprika on top
