Ingredients:

  • 2 english cucumbers (the long skinny ones wrapped in plastic)
  • 2 Tbsp garlic-seasoned rice wine vinegar
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp soy sauce
  • 1 tsp sugar
  • salt – to taste (I use about 1/2 tsp)
  • toasted sesame seeds for garnish

Directions:

  1. Peel and slice or dice cucumbers
  2. In a small bowl, whisk rice vinegar, sesame oil, soy sauce and sugar together until sugar is dissolved
  3. Add cucumber
  4. Toss gently until well coated
  5. Season with salt
  6. Sprinkle with sesame seeds
  7. Refrigerate until ready to serve

Notes:

  1. Do not substitute the cucumbers
