Ingredients:

For the Pie Crust: (mix all together)

  • 1-1/4 C graham cracker crumbs
  • 1/2 C sugar
  • 1/2 C slivered almonds
  • 1/2 C clarified butter (melt 1-1/2 sticks – remove foam)

For the Filling: (mix all together)

  • 2 (14 oz each) cans sweetened condensed milk
  • 6 egg yolks
  • 1/2 C store bought key lime juice
  • 1 Tbsp fresh key lime zest
  • 3 Tbsp freshly squeezed key lime juice (2 limes)
  • 2 tsp vanilla extract

Directions:

  1. Preheat oven to 325 degrees
  2. Spray pie pan with non-stick spray
  3. Mix the pie crust ingredients and press into greased pie pan
  4. Mix all of the filling ingredients together and pour over pie crust
  5. Bake 30 minutes, or until set
  6. Let stand at room temperature for 30 minutes
  7. Refrigerate until ready to serve
  8. Cut with knife that has been ran under hot water to prevent sticking and top with whipped cream
