Ingredients:

For the Crust:

  • 1-1/4 C graham cracker crumbs
  • 1/4 C sugar
  • 5 Tbsp butter – melted 

For the Filling:

  • 1/3 C water
  • 1/2 C (1 stick) butter
  • 1 tsp espresso powder
  • 1 C dark chocolate chips
  • 1/3 C sugar
  • 1 Tbsp vanilla extract
  • 1 pinch salt
  • 3 eggs

Directions:

Make the Crust:

  • Mix all ingredients together and press into a 9″ pie pan

Make the Filling:

  1. Preheat oven to 300 degrees
  2. In a medium saucepan, heat the pan over high heat
  3. Combine the water and butter and bring to a boil
  4. Add the espresso powder
  5. Stir until dissolved
  6. In a medium bowl, add the chocolate, sugar and vanilla and pour the hot butter mixture over it
  7. Whisk until the chocolate is melted and the sugar is dissolved – it should be glossy
  8. Add the eggs and whisk well to combine
  9. Pour into prepared crust and bake at 300 degrees for 12-15 minutes, or until chocolate is mostly set, but the center jiggles slightly
  10. Cool for at least 30 minutes
