Ingredients:

For the Crust:

  • 1-1/4 C graham cracker crumbs
  • 1/4 C sugar
  • 5 Tbsp butter

For the Filling:

  • 1/2 C cocoa
  • 1/4 C cornstarch
  • 3 egg yolks
  • 1-1/2 C sugar
  • 1/4 tsp salt
  • 2 C milk
  • 1 tsp vanilla extract

Directions:

Make the Crust:

  • In a microwave safe bowl, melt the butter
  • Add graham cracker crumbs & sugar
  • Stir until well combined
  • Press into a 9″ pie pan

Make the Filling:

  1. In a medium bowl, beat egg yolks
  2. Stir in cocoa, cornstarch, sugar, salt and vanilla until well combined
  3. In a heavy duty pot, over medium-high heat, add egg mixture
  4. Gradually add in milk – stirring constantly
  5. Cook until thick, beating it smooth
  6. Pour into pie crust
  7. Put in the fridge until set (about 2 hours) – serve cold
