Ingredients:

  • 1 lb pasta – use a shape, not a long noodle
  • 15 oz container of ricotta cheese (Polly-O Brand is the best, if you can find it)
  • 1/2 C (1 stick) butter
  • 3/4 C whole milk or half & half
  • 1/2 C parmesan cheese – freshly grated
  • 1/4 C fresh basil – snipped

Directions:

  1. Prepare the pasta according to package directions – drain well
  2. Return pasta to pot and add the ricotta cheese, butter and milk (or half & half)
  3. Cook over low heat, stirring until the butter melts
  4. Remove from heat
  5. Stir in the parmesan cheese
  6. Garnish with fresh basil

Notes:

  1. If desired, serve with grilled chicken on the side or 1 lb. cooked, crumbled italian sausage mixed in
