Ingredients:

  • 4 cans (16 oz each) refried beans
  • 8 oz cream cheese – softened to room temperature
  • 1-1/3 C sour cream
  • 2 pkg taco seasoning
  • 1/2 C salsa
  • 2 C shredded ‘Mexican Blend’ or ‘Queso Quesadilla’ cheese – divided

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, mash together the refried beans and softened cream cheese
  3. Stir in the sour cream, taco seasoning, salsa, and 1/2 C shredded Mexican cheese – mix well
  4. Pour mixture into a 13″ x 9″ x 2″ casserole dish
  5. Sprinkle the remaining 1-1/2 C shredded cheese evenly on top
  6. Bake for 30 minutes or until cheese is melted and bubbly

Notes:

  1. You can easily cut this recipe in half, just use an 8″ or 9″ square baking dish
