Ingredients:

  • 2 rotisserie chicken breasts – no skin
  • 2 C white cheddar cheese – shredded
  • 1-1/4 C parmesan cheese – shredded – divided
  • 8 oz cream cheese – softened to room temperature
  • 1-1/2 C caesar salad dressing – divided
  • 2 Tbsp green onions – chopped – for garnish

Directions:

  1. Preheat oven to 350 degrees
  2. Grease an 8″ square baking dish with non-stick cooking spray – set aside
  3. Shred the chicken into tiny pieces and place onto the bottom of the baking dish
  4. Top with 1/2 C caesar salad dressing – the salad dressing won’t cover the chicken entirely, so just scoop it over the chicken
  5. In a large mixing bowl, using an electric mixer, beat white cheddar cheese, 1 C parmesan cheese, cream cheese and remaining 1 C of salad dressing until well combined
  6. Top the chicken with the cheese mixture – leveling it out on top
  7. Bake for 25 – 30 minutes, until the top is golden brown and bubbly – after 25 minutes of baking, you can turn on the broiler fora few minutes, for a crispier top – watch carefully not to burn the cheese!
  8. Top with the remaining 1/4 C parmesan cheese and chopped green onions
  9. Serve immediately
