Ingredients:

  • 1pkg (or 3 Tbsp bulk) dry ranch seasoning mix 
  • 1 can (10 oz) red enchilada sauce
  • C shredded cooked chicken
  • 1 can (4.5 oz) diced green chiles – drained
  • C mexican blend cheese – shredded
  • 2 C queso quesadilla cheese – shredded & divided
  • tortilla chips – for serving 

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, mix together the ranch seasoning mix and enchilada sauce
  3. Whisk until no clumps remain
  4. Stir in the chicken, green chiles, mexican blend cheese and 1C of the queso quesadilla cheese
  5. Carefully mix until well combined
  6. Pour mixture evenly into a 13″ x 9″ x 2″ baking dish
  7. Sprinkle remaining queso quesadilla cheese evenly over the top
  8. Bake for 20 – 25 minutes until cheese is melted and bubbly around the edges

Notes:

  1. Serve with your favorite tortilla chips for scooping
