Ingredients:

  • 2 lb ground beef
  • 1 onion – chopped
  • 2 C beef broth
  • 1 qt tomato juice
  • 4 medium potatoes – diced (you can peel them if you prefer, but leaving the skin on is good too)
  • 1 can green beans
  • 1 can corn
  • 1 can peas
  • 1 can sliced carrots
  • salt & pepper to taste

Directions:

  1. Place a slow cooker liner bag in your crockpot *(see Notes below)
  2. Drain all of the juice out of the canned vegetables and set aside
  3. In a skillet, cook ground beef with onion until browned and season with salt and pepper
  4. Place cooked ground beef mixture and remaining ingredients in a large slow cooker
  5. Cook on high for 2 – 3 hours  OR  low for 4 – 6 hours – until potatoes are fork-tender

Notes:

  1. For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
