Ingredients:

  • 1-1/2 lbs flank steak – thinly sliced
  • 1/4 C cornstarch
  • 2 Tbsp olive oil
  • 1/2 tsp minced garlic
  • 3/4 C soy sauce
  • 3/4 C water
  • 3/4 C brown sugar
  • 1 C grated carrots
  • green onions – sliced – for garnish

Directions:

  1. Place a slow cooker liner bag in your crockpot (*see Notes below)
  2. Place the flank steak in a Ziploc bag with the cornstarch and toss to coat evenly
  3. In  a large bowl, mix olive oil, garlic, soy sauce, water, brown sugar and carrots until well combined
  4. Pour sauce into the bottom of the crockpot
  5. Add the coated flank steak
  6. Stir to coat the meat in the sauce
  7. Cover and cook on HIGH for 2 – 3 hours or LOW for 4 – 5 hours – until the steak is cooked throughout and tender

Notes:

  1. For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
  2. Serve over white rice and garnish with green onions
  3. This recipe came from my old dear neighbor, Trudy (who is a gun carrying right-wing republican, but I love her anyway – LOL)
