Ingredients:

  • 2 C butter – softened to room temperature
  • 1 C sugar
  • 1-1/2 C powdered sugar
  • 1 Tbsp vanilla
  • 4 C flour
  • 1 (14 oz) bag caramels, unwrapped or 11 oz unwrapped Caramel Bits work great
  • 1/3 C whipping cream
  • 1/2 tsp vanilla
  • coarse sea salt

Directions:

  1. Preheat oven to 325 degrees
  2. Line a 13″ x 9″ x 2″ pan with parchment paper or aluminum foil and lightly spray with cooking spray
  3. In a large mixing bowl cream together butter, sugar, and powdered sugar
  4. Add vanilla and beat until combined
  5. Mix in the flour and combine until it forms a soft dough
  6. Press half of the dough in the bottom of a 9×13 dish and place the other half of the dough into the refrigerator
  7. Bake in preheated oven for 15 minutes
  8. Remove the pan from the oven
  9. Melt the caramels, heavy cream and 1/2 tsp vanilla in the microwave for 1 minute
  10. Stir together until smooth
  11. Pour evenly over the hot crust
  12. Lightly sprinkle the coarse sea salt over the crust – you don’t want them too salty
  13. Take the remaining dough out of the refrigerator and crumble over the top of the caramel
  14. Return the pan to the oven and bake for 25-30 minutes until filling is bubbly and the top is firm
  15. Let them cool completely before cutting
