Ingredients:

For the Bars:
  • 2-1/4 C flour
  • tsp baking soda
  • tsp salt
  • 1 C butter – softened
  • 3/4 C sugar
  • 3/4 C packed brown sugar
  • tsp vanilla extract
  • eggs
  • 2 C chocolate chips (any kind)
For the Caramel Sauce:
  • oz evaporated milk
  • bag (14 oz) caramels
  • 1/2 C peanut butter

Directions:

  1. Preheat oven to 375 degrees
  2. Grease a 13″ x 9″ x 2″ baking pan with non-stick cooking spray
  3. In a small bowl, combine flour, baking soda and salt
  4. In a large mixing bowl, beat butter, sugar, brown sugar and vanilla until creamy
  5. Add eggs, one at a time, beating well after each addition
  6. Gradually mix in flour mixture
  7. Stir in chocolate chips
  8. Spread half of cookie dough into the prepared pan
  9. Bake for 8 – 10 minutes
  10. Remove from oven
  11. While the cookie dough is baking melt caramels and evaporated milk in a double boiler (or very carefully and slowly in microwave – 30 seconds on high at a time, stirring well after each 30 seconds)
  12. Add peanut butter after caramels are melted
  13. Melt thoroughly (If using a microwave, use the same method or 30 seconds on high at a time, stirring well after each 30 seconds)
  14. Spread over baked cookie dough base
  15. With the remaining cookie dough, drop by spoonfuls on top of the caramel mixture
  16. Bake for 15 – 20 minutes or until light golden brown
