Ingredients:

  • 1/2 C (2 sticks) butter – room temperature
  • 1 C sugar
  • 1 egg
  • 1-1/2 C flour
  • 1-1/2 tsp baking soda
  • 2 Tbsp cornstarch
  • 1/2 tsp salt
  • coarse sugar for sprinkling the top

Directions:

  1. Preheat oven to 350 degrees
  2. Line 2 cookie sheets with parchment paper
  3. In a large bowl, beat the butter and sugar until smooth
  4. Add in the egg and mix well
  5. Add in the flour, baking soda, cornstarch and salt
  6. Mix until well combined
  7. Scoop into balls, using a 1/3 C measuring cup – it should equal 6 even balls of dough
  8. Place 3 dough balls on each cookie sheet, leaving enough room for them to spread
  9. Slightly press down and sprinkle sugar on top
  10. Bake 12-15 minutes, or until lightly browned around the edges – watch them carefully, checking every minute or so after 12 minutes –  do not over bake – they should be very soft when they come out of the oven, but they will set up as they cool
