Ingredients:

  • 1 lb boneless, skinless chicken breasts – diced
  • 3/4 C mayonnaise or greek yogurt
  • 1 C parmesan cheese – shredded
  • 1/2 tsp seasoned salt
  • 1/2 tsp ground black pepper
  • 4 garlic cloves – minced
  • 1/2 tsp red pepper flakes – optional 
  • 1/2 C italian bread crumbs

Directions:

  1. Preheat oven to 375 degrees
  2. Grease a 13″ x 9″ x 2″ baking pan
  3. Place diced chicken on the bottom of baking pan
  4. In a small bowl, combine the mayonnaise (or yogurt), parmesan cheese, seasoned salt, pepper, garlic and if using, red pepper flakes
  5. Spread mixture evenly on top of chicken
  6. Sprinkle bread crumbs on top of mayonnaise mixture
  7. Bake for about 30 – 35 minutes, or until chicken is cooked through
  8. Remove pan from oven and use a slotted spoon to serve chicken on top of pasta, rice, or by itself
