Ingredients:

  • 1 onion – chopped
  • 1/4 C butter
  • 1/2 C honey
  • 1/2 C dijon mustard
  • salt and pepper – to taste
  • 6 boneless, skinless chicken breasts

Directions:

  1. Preheat the oven to 375 degrees
  2. Grease a glass 13″ x 9″ x 2″ baking dish with non-stick cooking spray – set aside
  3. In a small microwave-safe bowl, combine the onion with the butter
  4. Cook on high power for 2 – 3 minutes until the onion is tender – the onion may need more cooking time; just stir and return to the microwave
  5. Remove the bowl from the microwave and add the honey, mustard, salt and pepper – mix well
  6. Place the chicken breasts in a single layer in the prepared pan
  7. Pour the sauce evenly over the chicken
  8. Bake uncovered for 32 – 37 minutes until chicken is thoroughly cooked – the juices should run clear after piercing with a fork
  9. Serve the chicken with the sauce
