Ingredients:

  • 1/2 C onion – chopped
  • 1 Tbsp butter or margarine
  • 1 large slice of ham – cut up
  • 1 large tomato – chopped
  • 2 C Bisquick
  • 1/2 C – 2/3 C cold water
  • 1-1/2 C shredded cheese – cheddar or swiss
  • 1/2 C milk
  • 4 eggs
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Preheat oven to 350 degrees
  2. Lightly grease 13″ x 9″ x 2″ baking dish with non-stick spray
  3. Saute onion in butter
  4. Remove from heat
  5. Stir in ham and tomato – set aside
  6. In a bowl, mix Bisquick with cold water (start with 1/2 C) until soft dough forms (you may need a little more water) – beat 20 strokes
  7. Pat dough into greased baking dish with floured hands and press 1/2″ up sides
  8. Spread ham mixture over dough
  9. Sprinkle with cheese
  10. In a bowl, beat milk, eggs, salt & pepper with hand beater until foamy
  11. Pour over cheese
  12. Bake for 30 – 35 minutes until golden brown

Notes:

  1. Sometimes I sprinkle the top with chopped fresh green onions
