Ingredients:

  • 4-1/2 C chicken broth
  • 1 tsp salt
  • 1-1/2 C grits
  • 2 C diced boneless ham
  • 2 C cheddar cheese – shredded
  • 1 C whole milk
  • 1 C frozen corn kernels – thawed
  • 1 tsp onion powder
  • 3/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 4 eggs – lightly beaten

Directions:

  1. Preheat oven to 350 degrees
  2. Lightly spray a 13″ x 9″ x 2″ baking dish with non-stick cooking spray
  3. In a large pot, over medium-high heat, bring chicken broth to a boil 
  4. Whisk in grits
  5. Bring back to a boil
  6. Reduce heat to medium-low and simmer 15 – 20 minutes, whisking occasionally
  7. Remove grits from heat
  8. Stir in cheese until melted
  9. Stir in the ham, milk, corn, onion powder, garlic powder, pepper and eggs
  10. Pour into prepared pan
  11. Bake uncovered for 50 – 60 minutes
  12. Let stand 10 – 15 minutes before serving
