Ingredients:

  • 2 ripe bananas
  • 1 C pancake mix
  • 1/2 tsp cinnamon
  • 3/4 C milk
  • oil – for frying
  • powdered sugar – for sprinkling on top

Directions:

  1. Heat oil to 350 degrees
  2. In a mixing bowl, use a fork to smash the bananas
  3. Add in pancake mix, cinnamon and milk
  4. Whisk together until combined
  5. Drop about 1 Tbsp batter into hot oil
  6. Cook for about 2-3 minutes until they are golden brown and cooked through the middle
  7. Sprinkle hot fritters with powdered sugar
