*This recipe requires a donut baking pan

Ingredients:

For the Donuts:

  • 2 bananas – mashed
  • 3 Tbsp sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 Tbsp vegetable oil
  • 3/4 C flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp salt

For the Chocolate Glaze:

  • 1-1/2 C powdered sugar
  • 1 Tbsp light karo corn syrup
  • 1 tsp vanilla extract
  • 3 Tbsp water
  • 1/4 C + 2 Tbsp cocoa powder

Directions:

Make the Donuts:

  1. Preheat oven to 350 degrees
  2. Grease donut pan with non-stick cooking spray 
  3. In a large bowl, whisk together the bananas, sugar, egg, vanilla and vegetable oil
  4. In separate bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg and salt
  5. Fold the dry ingredients into wet ingredients – mix until batter forms
  6. Transfer batter into a plastic baggie – snip corner
  7. Pipe batter into greased donut pan – filling each cavity to 3/4 full
  8. Bake for 10 minutes and let cool completely before removing from pan

Make the Chocolate Glaze:

  1. Using an electric mixer, beat together all of the ingredients until well combined – you may need extra water to adjust desired consistency
