Ingredients:

  • 1 C flour
  • C cornmeal – I always use Albers brand white cornmeal
  • 2/3 C sugar
  • tsp salt
  • 3-1/2 tsp baking powder
  • egg
  • C milk
  • 1/3 vegetable oil

Directions:

  1. Preheat oven to 400 degrees
  2. Spray a 9″ round cake pan, a 12 ct muffin pan or an 8 ct mini-loaf pan with non-stick cooking spray
  3. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder
  4. Stir in egg, milk and oil until well combined
  5. Pour into greased pan (if using a muffin or mini-loaf pan, fill 2/3 way up)
  6. Bake for about 20 – 25 minutes for cake pan, about 14 – 16 minutes for muffin pan and about 17 – 18 minutes for the mini-loaf pan – a toothpick inserted to the center should come out clean
  7. Remove from oven and serve with butter and/or honey
