Ingredients:

For the Meatloaf:

  • lb 90% lean ground beef
  • dried bread crumbs
  • 1/2 C onion – diced
  • 1/2 milk
  • egg – beaten
  • Tbsp ketchup
  • Tbsp worcestershire sauce
  • tsp dried parsley leaves
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper

For the Topping:

  • 1/4 ketchup
  • 2 Tbsp light brown sugar – packed
  • Tbsp red wine vinegar

Directions:

  1. Preheat oven to 350 degrees
  2. Make the Meatloaf: In a large bowl, add the beef, bread crumbs, onion, milk, egg, 2 Tbsp ketchup, worcestershire sauce, parsley, salt, garlic powder and pepper
  3. Use your hands to mush and mix these ingredients together until well combined
  4. Add the meat mixture to a loaf pan
  5. Pat the meat down into an even layer
  6. Make the Topping: In a small bowl, mix 1/4 C ketchup, brown sugar and vinegar until well combined
  7. Pour the sauce on top of the meatloaf and spread it into an even layer
  8. Bake uncovered for 55 minutes
  9. Let the meatloaf rest for 10 minutes before serving (or it may fall apart)
