Ingredients:

  • 1 lb ground beef
  • 1 C chopped onion
  • 3/4 C salsa – thick & chunky
  • 1 package taco seasoning mix
  • 1/4 C water
  • 1 C whole kernel corn
  • 1 (2-1/4 oz) can sliced black olives, drained
  • 1 pkg jiffy corn muffin mix (which you will need an egg & 1/3 C milk)
  • 1 C shredded mild cheddar cheese
  • 1 (4 oz) can diced green chiles

Directions:

  1. Preheat oven to 350 degrees
  2. Cook beef and onion until beef is browned
  3. Drain all of the grease 
  4. Stir in salsa, taco seasoning and water 
  5. Cook over low heat for 5-6 minutes or until mixture thickens
  6. Stir in corn and olives
  7. Spoon into an 8″ square baking dish
  8. Prepare batter for corn muffin mix according to package directions  (except do not bake – you just want the batter)
  9. Add cheese and green chiles to the prepared corn muffin mix batter
  10. Spread over meat mixture
  11. Bake for 30-35 minutes until crust is golden brown
